Honey Lime Tilapia

Hooray for trying new things and them actually turning out! Any time I try to cook any type of fish besides salmon I end up with a smoke filled kitchen and the fire alarms going off… tonight was different thank goodness!

Assembled marinade in a gallon-sized ziplock bag. Combine lime juice, olive oil, honey, salt, pepper, and garlic powder. Add fish and marinate in the fridge for about 1 hour.

When ready to cook, combine flour, salt and pepper on a plate. Remove each fish fillet from the marinade and dredge lightly with the flour on both sides.

Heat 1-2 tablespoons olive oil in a skillet over medium-high heat until simmering. Cook fillets 2 at a time for 3-4 minutes per side or until opaque and browned. (this works best if you don’t disturb the fish much while letting it cook)
